This Creole-Style Skillet dinner is a quick meal to get on the table when you’re in a hurry! Skillet dinners are popular because they take just one dish and this recipe has only six ingredients! My shortcut is to purchase the frozen chopped onions with green and red peppers. You can easily add Cajun seasoning or substitute Andouille Sausage to kick it up!
1 medium onion, chopped
½ medium green bell pepper, chopped
½ lb. smoked turkey kielbasa, sliced into quarter-sized pieces
1 can diced tomatoes with olive oil, garlic and herbs, undrained
1 c. water
1 ½ c. uncooked instant white rice
- Drizzle non-stick cooking skillet with extra virgin olive oil. Heat over medium-high heat until hot. Add onion and bell pepper, cover and cook until vegetables are crisp-tender, stirring once.
- Add kielbasa, tomatoes and water; mix well. Bring to a boil. Stir in rice; return to a boil. Cook over low heat for about 5 minutes or until rice is tender.
- Fluff with fork before serving. If desired, serve with hot pepper sauce.
Note: To expedite the recipe, I purchase the frozen bag of chopped onions with red and green peppers.
