I love my herb garden! It is just a few feet out the back door from my kitchen so I love finding recipes that call for fresh herbs. My favorite is fresh basil. I have three varieties growing now so when I came across this appetizing (pun intended) appetizer recipe in the Mr. Food Test Kitchen Recipe Book entitled Just One More Bite I knew I had to try it!!
Weekends are perfect for trying out appetizers when you have a big family… with a growing teenage boy! It seems like we are scavengers grazing throughout the day as we run from one activity to another! This recipe is perfect and ready to roll in just a few minutes! I’d include a photo but the first batch disappeared while I ran in to quickly change a load of laundry. I can back for 3 remaining pieces… but I promise I’ll photograph the next batch because they are so pretty!
5-Minute Bruschetta ~ Mr. Food Test Kitchen
1 loaf French bread, sliced in to 1-inch-thick slices
1/3 c olive oil
1 Tbsp. balsamic vinegar
1/3 c. chopped fresh basil
1 tsp. salt
1 tsp. black pepper
10 plum tomatoes, seeded and chopped
1. Preheat your broiler. Coat a baking sheet with cooking spray. Place bread slices on baking sheet and lightly spray tops with cooking spray.
2. Broil 2-3 minutes, or until golden brown. (this takes only 1 minute in my oven so watch closely!!) Transfer to a serving platter.
3. In a large bowl, combine remaining ingredients; mix until well blended, then spoon over toasted bread. Serve immediately.
