I saw this scrumptious looking pie in Southern Living magazine this week and knew I HAD to make it!! Well, I was in luck because my sister saw that I had torn the recipe out and she surprised me with this yummo dessert today! The only adaptation she made was using a refrigerated pastry crust.
Classic Southern Buttermilk Pie from Southern Living magazine (May 2014)
1 1/2 c. sugar
3 Tbsp. all-purpose flour
3 large eggs
1 c. buttermilk
1/2 c. butter, melted
1 Tbsp. loosely packed lemon zest
3 Tbsp. fresh lemon juice
1 tsp. vanilla extract
Garnishes: fresh berries, whipped cream, fresh mint
1. Bake your pie shell according to package directions. Cool completely (about 30 minutes).
2. Preheat your oven to 350°F.
3. Whisk together first 2 ingredients in a large bowl. Whisk eggs and next 5 ingredients into flour mixture; pour into pastry crust.
4. Bake at 350°F for 35 to 45 minutes or until almost set. Shield edges with aluminum foil after 15 minutes. Transfer to a wire rack and cool 1 hour.
