I admit, sometimes its just easier to get take out from the local Chinese Buffet. That can get quite expensive. So I combined a few ideas I had seen in recipes on a few different sites and came up with this one:
2 Tbsp. brown sugar
4 Tbsp. honey
1/3 c. soy sauce
1 tsp. ground ginger
1/2 tsp. garlic powder
2-3 Tbsp. hot sauce
Mix these together in a small saucepan and warm over medium heat while you cook the chicken.
3-4 chicken breasts
1/4 c. flour
1/2 tsp. salt
1/8 tsp. pepper
Cut 3-4 chicken breasts into cubes.
Toss in a resealable bag with flour, salt and pepper. Shake until coated.
Heat oil in a large skillet over medium-high heat. Toss chicken in and brown on all sides (about 1 minute per side).
Pour sauce over chicken and stir to coat. Continue to cook for 5 minutes.
I like to make minute white rice according to package directions. Leave lid on to steam while you finish the chicken.
Stir Fry Veggies
I like to add a bag of stir fry veggies to my recipe. Usually snap pea mix or broccoli mix. To make this according to package directions I usually dump the chicken and sauce into another container to keep warm and then use that skillet to thaw/warm the veggies (about 7 minutes).
