One of my go-to cookbooks is Mr. Food’s “Just One More Bite”. I met the team from Mr. Food and enjoyed the conversation and opportunity to hear about their philosophy… it matches my “real food, with real ingredients, for real families” cornerstone. The ingredients are found in most everyone’s pantry or can quickly be grabbed at the local grocery store. In a few steps you have a great meal for your family!
One of our favorite recipes is Silver Dollar Chocolate Chip Pancakes. This recipe serves 8.
2 c. pancake and baking mix (like Bisquick)
1 c. club soda
1 tsp. vanilla extract
1 tsp. sugar
1 c. (6 oz.) semisweet mini chocolate chips
2 Tbsp. vegetable shortening, divided
1. In a large bowl, combine baking mix, club soda, eggs, vanilla and sugar; mix well. Stir in chocolate chips until combined.
2. On a nonstick griddle or in a large skillet over medium heat, melt 1 Tbsp vegetable shortening. Pour 1 Tbsp. batter per pancake onto griddle and cook pancakes about 2 minutes (or until bubbles appear on top.) Flip pancakes and cook 1 to 2 minutes more. They will be golden brown on both sides.
My kids will even eat these without syrup!
