By far my all-time favorite potluck salad! It is really more like a dessert than a salad! The perfect addition to your Thanksgiving table… especially if you are assigned to bring a salad to the family gathering!
Fudge-striped Cookie Salad
2 (3.4 oz) packages instant coconut cream pudding
1 ½ c. half and half
1 pkg. fudge-striped cookies
1 (11 oz.) can mandarin oranges, drained
1 (8 oz.) can pineapple tidbits, drained
1 (10 oz.) contained whipped topping, thawed
1. Beat the pudding with the half and half. Fold whipped topping into the pudding mixture.
2. Add the fruit and fold in.
3. Break the cookies into small pieces and stir gently into the mixture, reserving 5 whole cookies.
4. Dump into serving bowl. Break the remaining 5 cookies into larger pieces and arrange on top.
5. Chill overnight.
