So we were looking for something for a late Friday night snack while competing in the family video game challenge. The hubs came up with this concoction and we decided its a keeper!
16 oz. Velveeta cheese
1 c. milk
1/2 tsp. cayenne pepper (ground)
2 tsp. paprika
1 tsp. salt
1 (15 oz.) can no-bean chili
2-3 tsp. chili powder
2 tsp. cumin
juice of 1 lime
Cut the Velveeta into cubes so it melts a bit faster. Put in a heavy saucepan over medium heat and immediately add the milk and chili. Stir often to keep it from burning. Combine the dry ingredients and stir them into the cheese mixture. Once it is all melted, add the lime juice. Serve with tortilla chips.
I’m guessing this works well in a slow cooker too! Yummo!
