The name implies all: these are potatoes and… this dish is SUPREME! With just 7 ingredients it is easy to pull together!!

4 large baking potatoes, boiled with skin on
3/4 c. half-and-half cream
1 stick margarine
3/4 lb. processed cheese block
1/2 pint sour cream
1/2 c. chopped green onion
6 slices bacon, fried crisp and crumbled
Boil potatoes until tender when pierced with a fork; drain, cool, peel and slice. Place slices in a baking dish. Melt cheese, half-and-half cream and margarine together (stove top or microwave). Pour over the potatoes and place in oven, uncovered, at 350 degrees F for 30 minutes. Combine sour cream, onions and bacon. Spread over the top of baked potatoes and return to the oven for 5 minutes.
As an experiment, I once used canned potatoes (peeled and sliced). It definitely saved time but the taste was not as good (no surprise). But it wasn’t that bad either. I like to keep bacon that is fried in a resealable plastic baggie in the refrigerator for recipes like this. Of course, I always add twice the amount bacon it calls for:-)
