Here is another little concoction that is so simple it shouldn’t even be considered a recipe! These are super easy to whip up and are the perfect solution to when the kids ask if we can “make cookies.” You need only 4 ingredients. Seriously! It is easy to double, but I would suggest mixing in two separate batches to ensure the ingredients are evenly mixed. Essentially you have a homemade cookie within about 20 minutes with minimal cleanup. Sometimes I even let my middle kiddo mix it with her hands (when we’re enjoying the cookies as a treat at home, don’t worry!)
2 c. granulated sugar
2 c. creamy peanut butter
2 tsp. vanilla extract
Go ahead and preheat the oven to 325°F.
In a large bowl, mix all four ingredients until just blended. Use a 1″ cookie dropper (or teaspoon) to drop balls of mixture onto a baking sheet covered with parchment paper about 2 inches apart. Using a fork, create a criss-cross pattern and slightly flatten each ball. Sprinkle this top with a bit of sugar if you like.
Bake 10 minutes. The cookies will be golden brown. Cool slightly before removing with a spatula to a wire rack. Cool completely if you don’t eat them first.
Store in a resealable container. Makes 4 dozen.
