Chicken Chow Mein Casserole

I received this recipe from reader Carolyn Cosgriff. She said her mom served it with lettuce salad or Jell-O. I will apologize for the photo as I got home late and hunger won over photographic attention!

Chicken Chow Mein Casserole

Ingredients:
2 c. chicken, cooked and shredded
1 large can chow mein noodles
2 cans soup, mushroom or celery
2 cans milk or broth
1/2 c. onion, diced
1 c. celery, diced
1/4 tsp. salt
1/4 tsp. pepper
1 tsp. rosemary, optional
Directions:
Combine all ingredients and place in a buttered dish. Bake for one hour at 350 degrees F.

Microwave: Decrease milk or broth to 1 1/2 c. Let sit for 10 minutes after placing in dish. Microwave for 5 to 7 minutes. This gives you a crunchy dish.

Apron Strings Notes: My hubby made this dish in the microwave. He used milk instead of broth and omitted the rosemary. He microwaved for the full 7 minutes. The chow mein noodles were crunchy for those served the “first round.” I got home late from work and the noodles were softer by then.

Also, I’m not a huge fan of canned “cream of” soup so he made it from scratch (love my hubby!)
