It is almost football season! To get us in the mood, while we watch the Royals of course, we broke out the Chili Con Queso & chips!
Chili Con Queso Dip
1 lb. ground beef
1/2 c. yellow onion, chopped
1 c. Velveeta, cubed
1 (10-oz.) can diced tomatoes with green chilis
1 (12-oz.) can evaporated milk
2 Tbsp. chili powder
Brown the ground beef and drain any grease. Make sure beef is crumbled fairly small.
Combine all remaining ingredients with the beef in the slow cooker. Cover and heat on LOW 1-2 hours, until the cheese is melted.
Apron Strings Notes – Short cut by putting the cheese cubes in the microwave for a minute or two before putting them in the crock. I’ve also used the pre-shredded Velveeta to speed up the start to finish process.
Serve with tortilla chips!
